Chicken With Rice Casserole Recipe
Everywhere you look when you read an article, which a tv show or surf the web you can’t go more than a couple of days without seeing something (and this is a huge problem) related to people that are overweight. More and more people become obese and the reason for that is either lack of exercise, the wrong diet or eating food that is unhealthy and contains lots and lots of fats.
But as always there is a solution to this! People should focus on some low-fat foods and what comes to mind is chicken.
For this, i will share with you a low-fat chicken with rice that is one of my favorite and very easy to do.
FOR THIS YOU WILL NEED:
- A third of a cup of flour
- One and a half teaspoon of salt
- A pinch of pepper
- One cup of chicken broth
- One and a half cups of skim milk
- One and a half cups of cooked rice(i like the wild one but you can use also white rice)
- A skinned chicken breast (cooked a little bit in a pan until it get’s some color)
- A chopped green bell pepper (you can use your best food chopper to chop this)
- 4 Ounces of Mushrooms
PREPARATION OF THIS GREAT DISH:
For this casserole you have to pre-heat the oven to 350 degrees F(about 175 Celsius). Take a large saucepan blend the salt, pepper and flour. Add the milk and broth. You will have to stir constantly (at low heat) until you get a smooth mixture. When the mixture is smooth bring it to a boil for just one minute and after add the rest of the ingredients. Stir for about 2 minute more.
When this is finished pour all of it in a baking dish or in a 1 1/2-quart casserole(either one is great) and put it in the oven for about 45 to 50 minutes. You can also serve it with fresh chopped herbs(parsley for eg.).
This great recipe is for 4 persons so that you can enjoy it with your friends over a nice and healthy dinner.
